Fungi are an extremely versatile ingredient they can be dried, powdered, pickled, frozen, eaten fresh (and dependent on species eaten raw), added to puddings and rehydrated in booze. Fungi are fragrant, meaty, delicate, crunchy and widely variable with regards to individual taste. They team up well with pasta, fish, meat, vegetables and also go solo as the star of show and whats more is they can be found all year round.
